Yesterday, Twin Marquis Trading Company (TMI Trading ) travels from their crib in Brooklyn, to ours in Broomfield, to do demonstrations using their noodles in our Japanese Pan Noodles recipe. The noodle is really important to the dish, especially the Japanese Pan Noodles recipe, because if the noodles are too soft they absorb the sauce. Their noodles are harder, which helps cook and caramelize the noodles with the sauce.
We stared doing business with TMI Trading in 1995, when we first opening our doors in Cherry Creek, CO.
In the above photo (from left to right): Mechanical Engineer, Alan But (former scuba diver instructor and professional boxer), Noodles Culinary Research Specialist, Tessa Stamper, TMI Owner, Terry Tang (we call him Uncle Terry), Director of Supply Chain, Lara James, and Lawrence Tang (a.k.a. Funkmaster T- got his nickname from friends in college)
Separated at birth.
Although the snow is still falling in Broomfield, Colorado, our culinary research specialist is busy stirring up spring specials. Tessa Stamper is working with fresh asparagus to create a new menu item for spring. Nothing has been perfected yet. We’ll keep you posted.
